The shoulder blade bone runs through this deeply marbled roast, basting the meat from the inside as it slowly breaks down over hours of smoking or braising. Our pasture-raised Boston butts are larger, more flavorful, and more generously marbled than conventional pork — smoke it to 205°F and it will pull apart effortlessly into succulent strands.
